What is the difference between S, M and L model ships?

The difference is purely in the weapons and shields that come fitted when you first buy the ship. An S model ship will come with no weapons and minimum shielding (usually just 1x1Mw shield). An M model ship will come with basic weapons for the class of ship and medium shields. An L model ship will come fully equipped with maximum weapons and shields for the class of ship. Note that buying an S model ship does not restrict you from upgrading the ship to maximum weapons and shields later, and that turret weapons are not included in any of the models.
